Paleo Coconut Flour Tortillas

Being Gluten Free, there are limited options for delicious tortillas. Sure, you can always get corn tortillas but that is not my preference. I also do not like making complicated things with topiaco flour and xanthan gum (if you have tried a recipe with these, please feel free to share how it went). I have purchased some DELICIOUS almond flour based tortillas (picture attached) from our local natural grocery store (Grubbs) but they were a littler pricey than I wanted. But if you are fine with paying a little extra, this brand is so so good and pure!

But, If you are looking for a cheaper version, making it yourself is the best option. So, If you are looking for a paleo or gluten free tortilla and can do coconut flour, these are the best.

So, welcome to the table these delicious Paleo Coconut Flour Tortillas!!

Sure, they look don't look pretty but they taste amazing. Husband approved too! They seem to have more of a pancake feel to them but taste delicious. We used them for our chicken taco night (Against All Grain recipe) and have used them as snacks with peanut or almond butter and honey rolled up. 

The recipe is as follows:

 

Ingredients:

  • 1/2 cup Coconut flour

  • 5 large Eggs

  • 1 1/4 cup Unsweetened almond milk (or any milk of choice)

  • 1/2 tsp Sea salt (optional)

Directions:

1. Beat all ingredients together. Once you have mixed together, the coconut flour will act as a natural thickener so let it sit for a couple of minutes. 

2. The batter should become more runny as you pour into the pan to cook, so if it is not that way add more almond milk and eggs in proportions. (I ended up having to add an extra egg and probably 1/2 a cup of almond milk). 

3. Grease your pan and turn heat on medium. Pour batter into the pan and immediately expand by tilting the pan in different directions to evenly distribute the batter. Cover the pan with a lid until the edges turn inward and are a bit brown. Take the lid off and flip the tortilla until both sides are evenly cooked. This goes quickly so be aware! 

4. Oil the pan as needed and use up all the batter. We made quite a bit of tortillas with this specific recipe!
